Tucked away in the crevices of Albert Food Centre is a new, but certainly, highly promising hidden gem selling Ban Mian. A newly opened store with its signboard still shining brand new, in what is now a mere empty shell of a bustling food centre.

Meet Uncle Tan, the man behind this new stall. Just a few days before P2HA, Mr Tan began his embark on a new chapter in his life with high hopes for Ding Ding Fish Soup & Banmian. With carefully crafted and curated original recipes in hand, Uncle Tan opened this new stall with a dream of achieving his goal one day - to become the most well-known Ban Mian stall.

Topped off with a generous amount of ingredients, each bowl of piping hot Ban Mian was a testament to his hardwork and soul poured into each of his carefully thought out recipes. We were amazed by the broth's tantalizing, rich fragrance, to which Tan responded proudly that each ingredient was placed to bring out the soup's rich flavour. The taste was equally delightful, a light but certainly wholesome broth, perfect for a rainy day.

However, Tan's lofty but achievable dream of being the best Ban Mian stall in the world just seems a little too far out of reach for now. The store had been open for less than a week before it was struck with Uncle Tan's largest nightmare - P2HA. This turn of events was a huge blow to his business, and his hopes for a booming business were quickly crushed. Depsite incoming subsidies from the government, it is simply impossible for Uncle Tan to recover all sunk costs, and things are looking bleak.

Nevertheless, Tan has not given up on his dreams just yet. His goal is still the same - to serve the best bowl of Ban Mian he can to each of his customers. We send our best wishes to Mr Tan and look forward to the day where we can enjoy the rich flavour of his Ban Mian IRL at the tables of Albert Food Centre.

Until we can shake leg and lim kopi again,

The Hawker Cart.
