"山", pronounced as "shan", is the Chinese word for mountain, and it could mean a lot of things. For the uncle behind the 山 Braised Duck Noodles and Rice, it could be it the high aspirations he holds in his heart for the business, or the heap of flavours in just one plate of food. A friendly and cheerful man, he is full of passion for serving up delicious plates of food to his customers, opening his store as early as 7.30am.

山 Braised Duck Noodles and Rice, like its name suggests, is well known for its aromatic plates of duck noodles and rice. Overflowing with generous servings of tender succulent duck drizzled in his very own original sauce.

The sauce was sweet but had a hint of herbal taste. The steaming rice was fragrant, which complemented the burst of flavours from each mouthful of tender duck meat. The braised egg was the cherry on top, the perfect staple to the already wonderful duck rice.

His passion in what he does is not a secret to his regular customers - Always thinking of new ways to 'zeng' up the food he prepares, he is constantly improving his original sauce, and his effort poured into carefully curated choices of ingredients pay off in creating a plate of duck rice, where each ingredient was in perfect harmony with the others.

Beyond the amazing textures and flavours in his food, the uncle is known to be a friendly one, always open for small chit-chats with his customers and striking up conversations with them. Serving them generous servings of duck meat, the rapport he builds with his customers is invaluable, something that he looks forward to when dine-in restrictions are lifted.

Full of memories for his older customers, the food there is much more than a delicious meal, it’s a reminder of the nostalgia and warmth one receives from human touch, even if it's a fleeting moment of connecting with hawkers and leaving the store with a bag of warm, freshly cooked food.
